Nutty Quinoa Granola Bar

Quinoa (pronounced Keen-wah) is an ancient Peruvian grain that looks similar to cous cous and cooks like rice. It’s high in protein and contains all 9 essential amino acids making it a fantastic vegan protein source.

Quinoa has higher amounts of lysine, cystine, and methionine than all other grains; important for tissue growth and repair. It’s also a better source of iron than other whole grains, having 4 times more iron than brown rice and high amounts of calcium, phosphorus, vitamins A, E, and B vitamins for skin and bone health.

This Quinoa & Nut Granola bar makes an excellent grab and go breakfast. Which, as you’ll see from this post – One Big Mistake Most Parents Make – is much more nutritious than many other common kids breakfasts. It also ensures a good amount of fibre for a healthy digestion, which is lacking in the typical Beige Food Diet.

Here’s the recipe……

Rinse 1/2 cup of quinoa and cook it in 1 cup of water gently simmering for 10 minutes. Then place a lid on, switch off the heat and let it finish steaming for another 10 minutes.

Once all the water has absorbed, fluff the quinoa with a folk, place in a large bowl and allow to cool.

In the blender, 1hiz 1 cup of mixed nuts until finely chopped (but not powder), add these to the quinoa, plus 1/2 cup of desiccated coconut, 1/2 cup raisins, 1/4 cup dark chocolate chips or sunflower seeds and 3 tbsp ground flax seeds and set aside.

In the blender again place 1 ripe banana, 3 tbsp of nut butter (we used cashew nut butter), 4 dates and a tbsp of maple syrup or honey. Blend together into a gooey runny mixture.

Add the wet mixture to the dry and mix thoroughly. Line a 8 x 8 inch baking tray with baking paper. Spread out your mixture evenly pressing with a spatula. Place in an oven pre-heated at gas mark 4 / 175 C / 350 F for 20-25 minutes until golden brown and smelling delicious.

Allow to cool completely then cut into squares and enjoy. Can be kept in an air tight tin for up to a week. Healthy and scrumptious!
